Gee, maybe I'm bilingual, though not queer, and have also watched this conversation develop over time. I didn't mention being bilingual, because as a non-native Spanish speaker, I decided that the discussion about a "label" belongs to my native Spanish-speaking friends. One in four u.s. hispanics have heard of latinx, but just three use it? If only one in four hispanic/chicanx/ latinx folks have heard of it, then the paltriness of its use is easily explained. Wait a decade or two. It will then be as common as "Ms."
